Enjoy holiday wine pairings from the CRU Winery team
When it comes to holiday celebrations, our team loves to share their favorite food and wine pairings for the holidays.
Winemaker, Jose Reyes – Tamales & Albarino, Regan Vineyards Pinot Noir
On Christmas Eve, Jose’s family always gathers to celebrate and spend the day cooking tamales, pozole and ponche. At dinner they enjoy the foods cooked that morning with Albarino and Regan Vineyards Pinot Noir. Their evening ends with a religious ceremony with songs, fireworks, confetti and family hugs.
CEO, Nathan Stern – Pizza & Regan Vineyards Pinot Noir
Nathan celebrates with a upscale pairing of pizza and Pinot Noir but not just any pizza and Pinot Noir! He makes a special pizza sauce that is a blend of BBQ and tomato sauce and tops it with carmalized onions, diced bacon and char-grilled chicken. He pairs it with the Regan Vineyards Pinot Noir which pairs perfectly with the sweetness from the onion and salt from the bacon.
Wine Club Manager, Kellie Ballentine – Creamy Seafood Pasta & Highlands Selection Chardonnay
From her Central Coast home next to the ocean, Kellie’s favorite holiday pairing is a creamy, buttery seafood pasta in white wine sauce. Her favorite wine to use for the sauce is Highlands Selection Chardonnay which she serves with the meal as well for the perfect pairing.
Kris Jones, Senior Tasting Room Manager – Chicken Piccata & Albarino
For the holidays, Kris makes a savory chicken piccata using the CRU Winery Albarino both in the sauce and serves it with the meal. The bright citrus and acidity work perfectly with the lemon and capers for a perfect pairing.
Thomas Hall, Territory Sales Manager – Eggplant Parmesan & Grenache
One of Tom’s favorite holiday pairings is eggplant parmesan with Rancho Real Vineyard Grenache. His secret for a perfect pairing? Adding thinly cut serrano peppers which not only add an extra kick to the meal but draw out the earthy elements of the Rancho Real Grenache.
Matt Mauldin, Sales Director – Cedar Plank Salmon & Sarmento Vineyard Block 19 Pinot Noir
Matt and his family love making the holidays special with grilled cedar plank salmon that they top with a balsamic, garlic and whole grain mustard glaze. The salmon comes out savory and rich with spicy accents from the cedar and makes a perfect pairing for the bright fruit and spice notes of the Sarmento Vineyard Block 19 Pinot Noir.
Rebecca Gilbert, Marketing Director – Thanksgiving Leftover Shepard’s Pie and Pinot Gris
For Rebecca, one of her favorite pairings comes after Thanksgiving when she makes Shepard’s Pie with Thanksgiving leftovers. She makes it Thanksgiving weekend with visiting family, it is easy to make and perfect for enjoying with a holiday movie night. With savory turkey, bright cranberry sauce and creamy mashed potatoes it pairs perfectly with the bright fruit flavors of the Sierra Madre Pinot Gris.

Regan Vineyards Chardonnay and Pinot Noir: a tribute to Jose’s winemaking journey.
When it comes to his journey in winemaking, CRŪ winemaker Jose Reyes credits his introduction to the business to the historic Bargetto Winery and Regan Vineyards in the Santa Cruz Mountains. As a young man, Jose used to pass the winery on his way to work and his passion for winemaking was ignited.
He met with the winery owner and began working at the winery the next day. A quick learner, Jose was incredibly hands-on working in the cellar, on the bottling line, harvesting and learning everything he could about crafting high quality Central Coast wines. During his time at Bargetto Winery, he had the opportunity to explore and make wines from Regan Vineyards and their famous Mt. Eden clone.
Jose moved on to work at other wineries but he often thought back to Regan Vineyards. Situated atop a hilly knoll in the Santa Cruz Mountains, Regan Vineyards receives cool breezes off the Monterey Bay and its hilltop setting delivers consistent sun exposure. These combine with unique soils and mountainous topography for wines rich in flavor with bright acidity.
“My very first introduction to wine was Regan Vineyards. After my first harvest I was hooked, and I knew I wanted to be a winemaker. Regan Vineyards has always been a vineyard I wanted to make wine from and I am excited we now have a CRŪ Winery Regan Vineyards Mt. Eden Clone Pinot Noir and Chardonnay. These wines honor my winemaking roots and I am so proud to share them with our wine club members.” Jose Reyes, CRŪ Winemaker.

This Rose inspired charcuterie board is perfect for summer!
We chose each food on this board to pair with the 2024 Jose’s Rose of Grenache and highlight the wine’s fresh, juicy fruit flavors.
Board Ingredients:
Cheeses: Goat Cheese, Salty Fresh Cheeses
Fruit: Watermelon, Basil & Mozzarella Bites, Strawberries
Dried Fruit: Freeze Dried Figs, Pineapple “Chips”
Meats: Prosciutto, Salami
Spread: Rose Petal Confit
Crackers: Water Crackers
We suggest using a medium sized board/tray. Use cheeses and watermelon, basil & mozzarella bites as anchors in the middle and corners. Arrange meats and crackers to flow around cheeses. Place dried fruits and spreads to fill empty spots.

The Sierra Madre Vineyard is located just fifteen miles from the Pacific Ocean and is recognized as one of the finest cool climate vineyards in California. The proximity to the Pacific Ocean contributes a consistent maritime influence of wind and fog that combine with sandy soils. This combination leads to a long, cool growing season that results in fruit with concentrated and rich flavors.
Planted in 1971, the Sierra Madre Vineyard is one of the oldest vineyards in Santa Maria Valley. Over the years a variety of wineries have crafted wines from this prestigious vineyard including Au Bon Climat, Byron, Ken Brown and Paul Lato.
The vineyard was also owned for a period of time by Robert Mondavi, the father of California wine, who used the vineyard’s southern exposure and low yielding vines to create wines with depth and minerality. At CRŪ, we are fortunate to have partnered with the Sierra Madre Vineyard for over ten years and continue to be impressed by the quality of fruit we receive from this award-winning vineyard.

Located in Santa Maria Valley in Santa Barbara County, the Solomon Hills Vineyard is the closest vineyard to the Pacific Ocean in all of Santa Maria Valley.
The proximity to the Pacific Ocean leads to coastal fog and cool ocean wind. These marine influences create longer hangtime resulting in rich flavors and crisp acidity. The vineyard is comprised of both valley and hillside vineyards with the hillside vineyards receiving more direct and concentrated sunlight, leading to greater color and flavor in the wine. Given this terrain, grapes from the Solomon Hills Vineyard are all hand harvested.
The CRU Winery Solomon Hills Vineyard Pinot Noir is known for signature notes of juicy raspberry and black cherry with a long, silky finish. The Solomon Hills Vineyard Chardonnay is a beautiful balance of fruit flavors, delicately integrated oak and soft floral tones.

CRŪ Winery is proud to share they have been designated a certified Blue Zones tasting room at their Santa Lucia Highlands location. This impressive certification recognizes CRU Winery for actively implementing lifestyle changes and environmental modifications to promote longevity and overall well-being.
CRU Winery has been active with the Blue Zones Project since 2023, with a monthly hiking series at the CRU Winery tasting room in Soledad. This series inspired the winery to complete the certification process which addressed four pillars consistent with promoting overall well-being. With this certification, CRU Winery becomes the first tasting room in Monterey County to achieve a Blue Zones certification.
As a part of the Blue Zones pillar of moving naturally, CRU Winery will once again be teaming up with Valley Farm Management and Blue Zones Project Monterey County to offer their monthly hiking series at the CRU Winery Santa Lucia Highlands tasting room. Participants will hike through the sustainably farmed Paraiso Vineyard learning more about the importance of growing wines sustainably and then end with a tasting of CRU’s award-winning wines.

Located in the Monterey’s Santa Lucia Highlands, CRU Winery has sourced wine from the Sarmento Vineyard and had a close relationship with the Smith Family (who own and farm the land) for over 10 years.
The Smith Family have been growing grapes in the Santa Lucia Highlands for over 40 years and are considered pioneers of the Santa Lucia Highlands. Rich Smith, the founder of Valley Farm Management, was integral in establishing the Santa Lucia Highlands as an AVA in 1991.
The Sarmento Vineyard is located in the middle of the Santa Lucia Highlands bench and sits 600 feet above the Salinas Valley floor. CRU winemaker, Jose Reyes, has been working with the Sarmento Vineyard for over 10 years. During this time, he has had the pleasure of working with various sections of the vineyard and identifying which areas of the Sarmento Vineyard produce the best grapes. Block 19, the highest point on the Sarmento Vineyard, has long been his favorite location for Pinot Noir and in 2022 he crafted the Sarmento Vineyard Pinot Noir exclusively from Block 19.
With its close proximity to the ocean and Monterey Bay, cool winds are funneled into the vineyard providing a long, cool growing season ideal for Chardonnay and Pinot Noir.

This easy and delicious appetizer is the perfect bite to pair with Grenache or Pinot Noir!
To draw out the earthy flavors of the wine, we used two savory jams, caramelized onion and bourbon bacon. These savory jams are available at most fine food stores.
Ingredients:
- 2 Sheets Puff Pastry
- Caramelized Onion Jam
- Bourbon Bacon Jam
- Goat Cheese, cut into small bites
- Brie Cheese, cut into small bites
- Phresh finishing salt
Directions:
- Lay out defrosted puff pastry and cut into squares about 2″ x 2″.
- Put puff pastry squares into mini muffin tin coated with non-stick cooking spray, pressing down slightly.
- Press goat cheese into half of puff pastry squares.
- Repeat with Brie cheese in other half of puff pastry squares.
- Top with caramelized onion or bourbon bacon jam (we topped half with caramelized onion and half with bourbon bacon jam).
- Bake at directions on puff pastry dough (we baked at 350 degrees for 15 minutes).
- Remove from oven and sprinkle with Phresh finishing salt.
- Serve with CRU Winery Pinot Noir or Grenache.
