Red Wine Braised Short Ribs
Pair with the CRU Winery Potrero Vineyard GSM or Syrah or Sarmento Vineyard Block 19 Pinot Noir
Ingredients:
1 Large Yellow Onion, Chopped
2 Medium Carrots, Chopped
2 Medium Celery Stalks, Chopped
3 Garlic Cloves
5-6 Beef Short Ribs
Salt & Pepper
1 Tablespoon Olive Oil
1 Cup Beef Broth
2 Bay Leaves
2 Tablespoons Tomato Paste
3 Cups CRU Winery Potrero Vineyard GSM or Syrah
Directions:
- Preheat oven to 325 degrees.
- Rub Short Ribs with Salt and Pepper.
- Heat oil in a large ovenproof pot. Add short ribs and sear them on all sides. Once seared remove short ribs and set aside.
- Turn down heat and add onion, cook until translucent then add garlic, carrot and celery and cook until carrot is softened.
- Add tomato paste and cook for one minute.
- Add wine, broth, thyme and bay leaves.
- Return short ribs to pan and submerge in liquid.
- Cover pan with a lid and cook in the oven for 3 hours or until meat can be pulled apart with a fork.
- Remove short ribs and strain liquid discarding onion, carrots, celery, bay leaf, etc. Return sauce to pan and bring to a simmer until slightly thickened.
- Serve short ribs topped with sauce.
- Serve with CRU Winery Potrero Vineyard GSM or Syrah
